Maple Mustard Baked Salmon

Salmon is a very versatile fish. It’s delicious baked, broiled or tossed on the grill. Salmon’s a heart-healthy and flavorful solution and is one of our favourites because of so many tasty but simple preparations.

We would like to share one of our favourite recipes, Maple Mustard Baked or Grilled Salmon.
Wild Pacific Salmon is the most sustainable choice. Better than beef or meat any day of the week. Salmon is available frozen or better yet, fresh at any local super market.

What You Need:

4 Salmon Filets
Lots of Sea Salt and Freshly Ground Pepper
1/2 Cup (125mL) of Maple Syrup
1/2 Cup (125mL) of Grainy Mustard (You know the one with the little multi-coloured mustard seeds)
* Some may like 1 (5mL) Teaspoon of Curry Powder
1 Resealable Plastic Freezer Bag (for a marinade)

How to Make:
1. Slam your 4 salmon filets on a plate, and season with lots of salt and pepper.
2. In a small bowl whisk your maple syrup (buy some local real maple syrup!) and mustard together.
3. Your making a marinade, so grab your large Ziplock Freezer Bag (or any resealable plastic bag) and place your salmon inside.
4. Pour your bowl of maple mustard marinade over the salmon and marinade for a couple hours in the fridge, or even over night.
5. Cook it! You have some options:

a) Preheat your oven to 400°F and bake for 12 minutes. No need to flip.
a) Build a wood fire and let it die down to a nice glowing bed of coals, wrap your salmon filets in aluminum foil and grill your salmon for about 5 minutes on first side and about 4 minutes on second side.
b) Preheat your barbeque on high and grill your salmon for about 5 minutes on first side and about 4 minutes on second side. You don’t need the aluminum foil here. Slap it straight on the Barb.
