Jason Blaine’s Chicken Bruschetta Kickasserole!

Prep time 10 minutes
– 1 Can 19 oz Alymer Accents Italian Stewed Tomatoes (not drained –but I do cut the tomatoes in half), put them in a bowl and add 2 cloves of minced garlic. Stir.
– 1 package (120g) Stove Top stuffing mix for chicken
– 1 1/2 lb boneless skinless chicken breasts cut into large bite sized pieces
– 1 tsp. Dried basil leaves
– 1 1/4 cup mozzarella shredded cheese
– Preheat oven to 400.F
– Place tomatoes with liquid and garlic in a medium bowl
– I cut up my chicken next
– Cut chicken –average to large bitesize – I probably just guess and never can tell a difference any time I make it
– Then mix the Stove Top stuffing into the tomatoes – leave on the side
– Spray your pan (spray with pam or ?) 13×9 baking dish
– Then I place my chicken all over the bottom of the baking dish to cover the bottom
– Then sprinkle with basil (I am generous with the basil and cheese)
– Then put the cheese all over to cover
– Then spoon the tomato/Stove Top mixture over the top to cover…
Bake 30 minutes 400 degrees.   6 servings.
*tip – goes great with red wine.
