Grandma Petric’s Best Perogie Recipe

Filling

• Approx. 5 medium to large potatoes

• Cream cheese

• Salt and pepper

Boil potatoes, drain and save potato water for dough in separate bowl.  Mash potatoes with cream cheese (approx. ¼ cup), salt and pepper to taste. Cover and set aside.

Dough

• 2 cups flour

• 1 tsp salt

• ½ tsp baking powder

• 7/8 cup warm potato water

• 2 tbsp vegetable oil 

Combine flour, salt and baking powder.  In separate bowl, combine luke warm potato water and vegetable oil, and add to flour mixture.  Knead dough for about 5 minutes.  You may need to add additional flour if texture is sticky.

Cover and let dough rest for 10 minutes.

Roll and cut in circles.  Fill with potatoes.  Boil for 5 minutes, drain and lightly fry in butter.  

Makes about 2 dozen.    

Good rule of thumb to ensure that you have enough dough for the filling is, for every cup of mashed potato mixture you have, you need 1 cup of flour for the dough recipe.  (If you estimate that you have about 4 cups of mashed potatoes, then your dough recipe should start with 4 cups of flour.)
