Lazy Cabbage Rolls

(because let’s face it, the lazy way allows for more eating & spending time with the family!)

Ingredients

  • 1 Small-Medium Sized Cabbage Chopped (as preferred)
  • 1 Large Onion Chopped
  • 2 Cans Tomato Soup
  • 2 Cups White Rice (uncooked)
  • 1 Cup of Water
  • Salt & Pepper to taste
  • Butter

Instructions

  1. Preheat oven to 375F
  2. In a pan, add half of your chopped onion with 2 tbsp butter. Cook until soft.
  3. Add both cans of tomato soup to onions. Let simmer.
  4. In another pot, cook two cups rice as you usually would (until 3/4 of the way done) with the other half of the chopped onion
  5. Cut cabbage into small cubes
  6. Put cabbage and 1tsp of salt into 1 inch of water in a covered pan to pre-steam until soft
  7. In a large mixing bowl, mix near-cooked rice mixture, cabbage (with the water that didn’t evaporate), 1tbsp butter, and salt & pepper to taste.
  8. Put mixture into casserole dish. Top with tomato mixture. (Poke small holes with a knife so it combines flavours in the oven).
  9. Cook covered for 30 minutes. Then turn down to 350F for an additional 30-40 minutes.
  10. Attempt to only fill plate once. Go back for seconds and thirds. Commence food coma.
